Bacon Sriracha Deviled Eggs

My husband works most weekends, so he gets every Thursday off. Which is nice because with 2 kids in school all day and a preschool gone for 2.5 hours, we get a weekly afternoon lunch date. We've spend most of our Thursday afternoon's trying different restaurants around Bedford and Manchester.

One of my favorites so far is KC's Rib Shack located on Second St. in Manchester. KC's offers a bunch of southern style favorites, great burgers, like the Peanut Butter and Jelly Burger, served with crispy bacon and jalapeƱos. It's flipping amazing, the best, yet weirdest burger I have ever eaten. 

They also have a sriracha bacon deviled egg that I am pretty obsessed with. Of course, I have made them twice at home since trying them at KC's... because lets face it, deviled eggs are the best ever!

Bacon Sriracha Deviled Eggs
6 boiled eggs
3 tbs mayonaise
1-2 tbs Sriracha Thai Chili Sauce (depending on how spicy you like it) 
The juice of half a lime
1 tsp honey mustard
3-4 strips of crispy bacon (depends on how much you love bacon, I really love it so I used 4) 
Pinch of salt
Fresh Cilantro 


Cut your delved eggs in half length wise, place yolks in a small mixing bowl, and the egg whites on a plate/platter.

Mix the remaining ingredients in with the egg yolks, mixing with a  fork to mash everything together. 

Spoon the yolk filling in to the egg whites.

Garnish with additional bacon and cilantro.
