Moroccan Spiced Pork Ragu

I know technically the New Year does not start until Thursday,  but for me, I turned over a new leaf a couple of days ago.  I have been spending a lot of time reflecting on 2014, the things I did, the things I wish I had done, and where I am starting 2015. 
Professionally, I made the most money I have ever made. For those wondering, it wasn't THAT much, I was a preschool teacher in a former life... and for the record you can hardly live off that income. Then obviously once I became a stay at home mom my income was non existent. So in that aspect I am pretty proud of myself. Not everyone can turn a hobby (my blog) into a job. I was able to do that.

Though, I made more money this year, I worked FAR less than I did the previous years on my blog. Now some might think that is awesome.... working less, but making more? In a way it is, but the time I took off in 2014 is catching up with my business side of my blog now as we enter the New Year. I feel like I have sort of dropped off the map. 
So what does that mean for Bakeaholic Mama? I have got to kick things in full gear and get things done. Learn to balance family life while working from home... so I can actually WORK. Start back at square one and network the crap out of myself and my work, the same way I did when I was just getting started, and most of all more recipes!! My blog will not survive with only one blog post every 10 days. I need to start posting regularly. 
So, for the third recipe of the week.... Pork Ragu, filled with warm Moroccan flavors served over basmati rice. It's the perfect warm you up, stick to your bones type of recipe this winter... and it's not half bad for you either! To make this an easy weeknight meal, I use leftover pork roast from our Sunday dinner. Shred it up and simmer it away with vegetables, chickpeas and spices. 
Moroccan Pork Ragu
Inspired by Eating Well's Moroccan-Flavored Pork Ragu

2 tbs extra virgin olive oil
2 cups leftover pork, cut up into small pieces or shredded (Chicken or beef works well too!)
1 cup canned chickpeas (drained and rinsed) 
1 carrot
1 small sweet potato
1/2 cup golden raisins
1 small onion
1 small bell pepper (I used an orange one)
The juice and zest of one large lemon
1 cinnamon stick 
1/2 tsp ground turmeric
1/2 tsp ground coriander
1/2 tsp ground cumin
1 tsp minced garlic
1/2 tsp grated fresh ginger
1 12 oz can of crushed tomatoes 
1 tbs honey
A few dashes of your favorite hot sauce (optional) 
Salt and pepper to taste
Fresh scallions or cilantro to garnish

In the bottom of a heavy bottomed pot (I use my dutch oven), add olive oil and heat over medium high heat.
Toss in pork, chick peas, carrot, sweet potato, onion, bell pepper and sauté with a pinch of salt until the onions are translucent and the pork and other veggies start to soften and brown. 
Add in remaining ingredients and allow to simmer on low heat for about 30-45 minutes, stirring occasionally. 
If the ragu becomes too thick, add in a tbs of chicken, pork or veggie stock as needed. 
Salt and pepper to taste, and serve over your favorite grain or pasta. I like to use basmati rice. Top with fresh scallions or cilantro.
