Lobster and Bacon Cakes with Garlic Aioli

Happy  Birthday to the most handsome man I know. My best friend, my husband, and the father of my three kids.

I have good taste huh? I married a real hottie!
This is what he looks like in real life. He will probably kill me for posting that picture from a Halloween party at a friends 2 years ago.

We are not huge on gifts for each other. It's become hard to buy gifts since we both are pretty simple people and buy what we need and want for ourselves. This year to make his birthday special I made him lobster! (He got it a day early so I could blog it) Tonight for dinner he will get another round of something special plus the dessert he requested. Brownies served with a hot custard sauce. His Grandmother's famous dessert.

I was worried he wouldn't go nutty over my lobster cakes but he really loved them! They are much like a crab cake, a mixture of lobster meat, bread crumbs egg, mayo and seasoning. Covered in butter then broiled until crispy all over. I served his cakes topped with a Garlic Aioli.

Lobster and Bacon Cakes with Garlic Aioli
Recipe inspired by Savory Simple's Jumbo Lump Crab Cake Sliders

1 1/2 cups cooked lobster meat
1/4 cup crumbled  bacon bits (make your own bacon and crumble when crispy)
1/3 cup unseasoned breadcrumbs
1 tbs diced chives
1 cloves of garlic minced
3 tbs mayonnaise
1 tsp Dijon mustard
1 tbs lemon juice
1 egg
1/4 tsp salt

*for broiling 2 tbs butter

Cut lobster meat into small pieces add to a medium mixing bowl with your bacon, breadcrumbs, chives, garlic, mayo, mustard, lemon, egg and salt. Using your fingers work the mixture just until it comes together, Form into about 4 patties (think burger sized). Preheat broiler to low.

On a lightly greased baking sheet place all four cakes and top each with about 1/2 tbs of butter. (just leave the dab right on top so it melts down over the whole cake while broiling)

Broil on the center wrack for about 10 minutes or until the each lobster cake is crisp and brown all over. Be sure to watch the lobster cakes carefully to make sure they do not burn. Since each broiler is different. If you feel they are not cooking fast enough on low you can turn the broiler up to high.

Quick Easy Garlic Aioli:
1/2 cup mayonnaise
pinch of salt
2 large cloves of garlic, minced

Mix your aioli ingredients together until smooth.

Serve Lobster Cakes on a bed of greens topped with Aioli and fresh chives.
