Slow Cooker Sam Adams Boston Baked Beans

Do you ever feel like when things finally start going your way the other shoe drops? I've been talking with you all about our house hunt over the past couple of months. Steve and I have been really really lucky to have a great friend who rented us the perfect 3 bedroom cape for years dirt cheap. We had no reasons to leave until we out grew it. Well, we are at that point and need purchase a home of our own to house a family of 5 with 2 dogs and 3 cats... or as I like to call it a zoo.

We found one house, fell in love, put in an offer...were led to believe the deal was going to be made then it flipped on us. No deal. Along comes house number two.... fall in love again perfect spot lots of room... deal was made and we signed a purchase and sales agreement. Then comes the home inspection. The house needs a new septic system, new well, new boiler, new hot water heater, chimney issues, and then several other things... Our perfect house was no longer perfect. We had to back out of the deal.

Same day we back out of the house number two... something else big happened that I can't talk about.... yet! (I'll clue you all in when the time comes) It doesn't feel like a good thing right now as we are hanging in limbo, however in the long run it will probably be a great opportunity for our family. For the next few days or weeks I am sitting on pins and needs with a major stomach ache wishing and hoping it all works.

So If you don't see me post as much this week or the following... it's because I'm up to my eyeballs in anxiety. Seriously... I should go get some freaking Valium and chill.

Even though my head has been up my ass, I do have a better late than never blog post for you!
Another segment of Cookin' My Way Across America. Today we are on to Massachusetts. (.... which is a hint to what big changes may be coming my way!...)

Mass... the home of the Sox, chowdah heads, Sam Adams, and Beantown.  What better way to celebrate my neighbors, than Boston Baked Beans, slow cooked in Sam Adams. Not the patriot... the beer...

This recipe is one I use often but with a small tweak, I loaded them up with beer instead of water. I also used chicken stock... this is a first for me. Typically beans are baked in a water that is sweetened with syrup, molasses, brown sugar and salted with a hunk of salt pork, Baked Beans are a staple at most New England potlucks and BBQs, so they are something we make often in our family.

Sam Adams Boston Baked Beans

1 lb kidney beans (or navy beans, pea beans, soldier beans)
1/4 lb salt pork ( I buy sliced)
1 yellow onion diced
1/4 cup molasses
1/4 cup maple syrup
1/4 cup brown sugar
1 tbs yellow mustard
1 bottle Sam Adams 
1 cup unsalted chicken stock
1 cup water

In  large bowl add beans and cover with water. Allow to sit and soak overnight or for 8 hours. 

In a small bowl whisk, molasses, maple, sugar, and mustard together. Set aside.

In your slow cooker, place salt pork at the bottom, then pour in your beans, top with your onions.

Pour you molasses and maple mixture of your the top, then add beer, stock and water. Cover and set to low and slow cook for 8 hours.

Be sure to check the liquid level, if the beans seem to dry go ahead and ad a 1/2 cup of water or chicken stock.

  8. Gah, I'm so sorry the house hunting has been so disappointing, Carrie. I remember how stressful it was when I was looking for my place four years ago. I'm a big believer that with real estate, it's all meant to be. Your perfect house is out there waiting for you. Could it have to do with your big news?   11. I love your posts! I share the love of cooking too, must be the cool 'Carrie thing' going on with you! I did 5 kids, menagerie of animals thing too and love all the memories. My kids are grown and mostly gone now and my 3 'kids' now have 4 legs, wagging tails and wet noses but the biggest kid is the most spoiled of all and is always with me...I call him the Hubs. :)
    Have faith in the house hunting, it will manifest when it is meant to be. Hope whatever is 'the big secret' is a good thing, and tell us when you can!
