Spinach Feta Veggie Burgers w/ Crispy Fried Onions and Roasted Tomatoes

I feel like I am breaking some unspoken blogger rule right now by not posting a seasonal Turkey Day recipe.

I have my share of them, and more to come next week. But this burger was just so good I had to share it with you all!

I'm becoming the master of making fun and interesting veggie burger combos. My husband is quite happy with my menu choices. He went nutty for this burger. Eating it for dinner, lunch and then dinner again!

My husband doesn't give me much for feed back when I ask how good a dish is. Or if it's blog worthy. I get the "Yeah, it's good" with a shoulder shrug. How I know he really likes something is when he goes for seconds, thirds, or then eats the same thing for days in a row.

After that, I know it's safe to share with my readers!

This burger is simple really. Not too much to it. The base is pureed chick peas, some sauteed onions, bell peppers, spinach, and feta cheese. Topped with more fresh spinach, some crispy fried onions (YUM), and because I don't like big slices of raw tomato, I roasted a few slices and topped the burger with those.

This is a burger that vegetarians and carnivores can get behind!

Spinach Feta Veggie Burgers with Crispy Fried Onions and Roasted Tomatoes


1 15 ounce can chick peas drained and rinsed
1/2 cup bread crumbs
1/4 cup diced onions
1/4 cup diced bell peppers
1 egg
1/2 tsp salt
1/2 tsp ground cumin 
3/4 cup feta cheese crumbles
2 handfuls of fresh baby spinach
(Veggie stock Optional)

1 medium onion sliced thin
2 tbs olive oil; divided
1/2 tsp salt; divided
1 large tomato  sliced


In your food processor, add in chick peas, bread crumbs, onion and egg. Pulse until pureed. Add in bell pepper, pulse a few times just to dice the pepper and incorporate it. 

Add in remaining burger ingredients pulse a few times just until combined.

If the burgers seem to dry, add in a bit of vegetable stock. If they are too wet, add in more bread crumbs 1 tbs at a time.

Form burgers into patties. Should yield about 4 burgers. 

Fry in an oiled fry pan over medium/high heat. About 4 minutes on one side then flip and fry for another 2-3 minutes on the other side. OR until the burgers are golden brown.

To start your toppings. 

In a fry pan over medium/high heat, add in 1 tbs olive oil, 1 medium onion, and 1/4 tsp of salt fry until crispy and browned. Remove from pan and place onto a paper towel to strain some of the oil off.

For the tomatoes. Preheat oven to 400. On a parchment paper  lined cookie sheet place tomato slices in one layer, drizzle with remaining olive oil and salt.

Roast for about 10 minutes or until they are starting to caramelize on the tops.

With a spatula carefully remove from the cookie sheets onto the prepared burgers. Top with the fried onions.... 

And then stuff your face!

    I used to be a hard-core vegetarian (except for cheese, I could not live without my cheese!). As a kid I just felt soooo bad for the animals, I remember standing in the kitchen, crying, holding a mackerel my mother just bought in my arms. My sister came in and yelled: "Mom! Sarah's crying , and she's holding our food again!"
    I was very young, but my sister yelling that to my mom stuck in my mind it's one of those rare, very clear memories of my youth. (I had pet-goldfish, and I think I just realized they were fish too! Like I said, I was very young, and obviously very sensitive :p!)

    As a grown up I never ate a lot of meat, and there were times when I would walk through the grocery store and all the meat just looks so... unappealing.
    So I would not buy it. There have also been times when meat (and eggs and cheese) were too expensive for me. That is when I discovered beans ans chickpeas (is chickpea a bean? How bad, I don't know!)!
    They are wonderful! And onions, garlic and herbs are my friends, always loved them! they give a dish sooo much more flavor!
    And add just a small handful of nuts (cashew are my personal favorite) and you get a completely different texture, and you can create some crunch.
    I even made vegetarian stuffed portobellos once or twice for Christmas dinner. It was more popular then my traditional stuffed chicken!

    Long story short: I love these "meat" recipes, you can use to create lovely, flavorful meals! I love being able to make them myself, and not rely on a package, or a meat-substitute made by a company! (Also, try to keep meat when there is no power, but canned chickpeas, no problem!)
    So thank you for reminding me of something I used to really like, but somehow forgot...

    1. Sarah, I didn't eat meat (with the exception of chicken occasionally) until I was an adult and pregnant. I started craving it... probably my bodies way of telling me I needed more iron! Now I love it, but feel so guilty when eating it. My philosophy is that if the animals are not handled with dignity, then we should not eat it. So I try to buy ONLY locally raised meats. I wish more people were educated on how today's meats are raised... it would turn most carnivores vegetarians!

  4. i cannot even believe it. these burgers have EVERYTHING i love about food in them. seriously. feta, spinach, veggie burger (i eat them like 3x per week), crispy onions, and roasted tomatoes. I had no idea all of that was possible on one plate but I am SURE GLAD you posted this recipe. I am drooling. I want one for breakfast right now with my pumpkin coffe lol.

  6. Not to be a stick in the mud, but doesn't the addition of an egg eliminate the vegetarian qualification of this burger? Thankfully I am a vegetarian so I still want these in my belly!

    1. Although, I guess it's unfertilized so it could be qualified as an animal product and not an animal itself? IDK haha

    2. Oh man... you have me reading up on what qualifies as a vegetarian dish! All the vegetarians I know eat eggs. I always thought vegans couldn't? So in what I just read.... Ovo Vegetarians eat eggs??? I am going to revisit this post later tonight when I have more time and talk about that and egg substitute as an option.

  7. I adore veggie burgers! A often find that my veggie burgers don't even need an egg...but a good sub would be 1 tablespoon flax seed (or chia seed) with 3 tablespoons warm water; let it sit for a few minutes and it gels...great for vegan baking too!

    1. I've used flax seed in baking in my vegan recipes it does work well! I've made burgers with or without egg.... honestly I can't tell much of a difference in the burgers with them. It's about the same texture! So your right it's not always necessary. I've never used chia seeds as an egg sub. I need to visit that idea!!

I have to say... with respect to Carrie Burrill's comment..animals are rarely treated "respectfully" if they are being killed for your dinner, especially when you don't need to eat them for your survival. Maybe it helps you sleep at night to look at it that way, but they are still suffering because of your choice. You have such a talent for creating delicious vegetarian food, and I am so excited to try this. Why not use those talents and tools to be one of those standing against eating our friends here on earth? You sound like you already know what is right in your heart.
