Pumpkin Bread Pudding and a GIVEAWAY!

I'm a little sad... two days left of Pumpkin Week. Today we have Jen from Savory Simple she is sharing her Pumpkin Bread Pudding with us. Does anything say comfort better than bread pudding? I won't lie, there are times I look forward to my bread going stale, just so I can make a batch of bread pudding for a Sunday brunch, or a special dessert. What better way to celebrate Pumpkin Week than with a comforting dish like Pumpkin Bread Pudding?

Bread pudding was never something that appealed to me when I was growing up. My exposure
to food was somewhat limited and bread pudding just wasn’t served to me at home or on the
road. I wasn’t a picky eater but I was definitely a creature of habit. Now that I think about it, I
don’t believe I even tried bread pudding until I was in my mid to late 20s. It was fine. Not habit
forming, as my husband would say. It wasn’t something I would order off the dessert menu over
cake or pie.
As the years went on, though, I grew to really love custard. Creme anglaise, pastry cream,
curd... heck, even ice cream is technically a custard. It’s funny how looking at the same
ingredients from a different perspective suddenly makes them that much more exciting. When I
was training at culinary school, we made custards and fresh breads on a regular basis. So when
it finally came time to make bread pudding, I got it. For the first time I understood the appeal
of bread pudding. Because seriously, what’s not to love about fresh custard and homemade
This recipe is very similar to what we made in school that very day. Both brioche and challah
work perfectly, but you definitely want to use bread that’s a few days old and dry. I know it
seems counter intuitive but if you use fresh bread it will get very mushy in the custard and lose
it’s shape. It will still taste good regardless. Also, do as I say and not as I do. I waited one day
and could tell the bread wasn’t completely dry but was over-eager to devour the dessert. And
you can sort of see it in my photos. There’s some shape but a few areas are lacking texture.

Pumpkin Bread Pudding
Active Time: 15 minutes
Inactive Time: 1 hour, 30 minutes
Total Time: 1 hour, 45 minutes
Yield: 4 servings


1 pound brioche or challah loaf (old/dry bread works best)
1/2 cup half and half
1/2 cup milk (whole, low fat, non-dairy, etc.)
2 large eggs
2.5 ounces sugar
a splash of vanilla extract
1/2 teaspoon pumpkin pie spice
1/4 cup pumpkin puree (preferably fresh, not canned)
optional: 1/2 tablespoon pumpkin powder (see notes)


1. Whisk together the pumpkin, eggs, sugar and vanilla.
2. Whisk a small amount of the half and half into the pumpkin pie spice and pumpkin
powder to avoid lumps. Whisk the spice mixture into to eggs.
3. Whisk in the rest of the half and half and almond milk.
4. Trim crusts off the bread and slice into chunky squares.
5. Line the bread in a gratin dish. I used a single 1-quart dish but you can also use several
smaller dishes.
6. Pour 3/4 of the custard over the bread. Push the bread down to make sure everything
soaks with the custard.
7. Chill at least 30 minutes or overnight.
8. Add the remaining custard to the gratin dish.
9. Preheat the oven to 300 degrees F.
10. Place the gratin dish in a larger baking dish and fill the larger dish with warm water.
11. Cook the bread pudding until the custard sets, approximately 1 hour.
12. Serve lukewarm.
Pumpkin powder* isn't essential but it adds color and flavor. I use it in almost all of my pumpkin

  19. It sounds bizarre but I love chickpeas cooked with balsamic vinegar. I also love canned apricots and potatos and onions cooked in butter.

To go against the grain, I have to say I am definitely more comforted when I eat light and fresh meals, when I work up a sweat and when I get outdoors, despite the frigid temperatures and dampness of winter. So comfort meal? A tangy fruit salad, a quinoa toss with greens, and some hearty kidney bean cookies with a cup of hot tea. That, to me, is comfort at its core.
