The Perfect Roasted Chicken

Roasted chicken is always a favorite in our house. It's a classic  that just screams comfort. One of those meals that brings everyone to the table to sit together and enjoy a nice dinner as a family. 

Family dinners are tough in our home from February-October, as those are my husbands busy months (most of the entire year) at work, and he does not get home until after 9pm. I find myself falling in the rut from time to time of preparing 3 separate dinners. One for the kids around 5, one for myself after the kids are in bed around 7-8 and then one for my husband at about 9.... which I sometimes eat as well. And like I really NEED to eat dinner twice right?

When I start to feel myself falling into this terrible dinner time routine I pull out the family favorites at least 2 days a week (Hubs day's off) so we can have a sit down family dinner.  Roasted chicken is on the list of things to make.

I have a secret to making perfect roasted chicken or turkey that will yield a brown crispy skin, it will be moist and packed with flavor.

Before I tell you what it is. I want to warn you, some of you might be ohhhh gross! But let me explain. This makes sense. It does! And it works!

Last Thanksgiving I saw this recipe for a Mayonnaise Roasted Turkey. I was instantly intrigued.

Really? Mayo?

I tried it out on my in laws on turkey day. Everyone agreed, it was the best turkey they had had in a long time. Since I am not going to roast a turkey for a simple family dinner for 5 people I opted to try this method out on a whole chicken for an easy family dinner instead.

When you think about it, mayo is what?

Oil. Eggs.

When you make your birds you tend to brush it with olive oil or butter right? Not so strange.

Eggs. Well you use eggs to brush the outside of pastries and such to create that pretty crust right??

The mayo creates a crust on the outside that not only looks good, tastes great but it holds the moisture in the chicken as well.

Don't turn your nose up. Give it a try, I promise you perfect chicken made easy! Now I used the herbs I had on hand you can change that up and use what you like or have around your house. I just stress that you use fresh.

Mayonnaise Roasted Chicken


1 5lb whole chicken, giblets removed
1 cup mayonnaise
1 tsp coarse salt
1/2 tsp ground black pepper
2 cloves of garlic minced
1/2 tsp diced fresh sage
1/2 tsp diced fresh basil    
1 lemon zested and juiced
1 onion


Preheat oven to 350.

Pat chicken dry and place in your roasting pan.

In a mixing bowl mix mayo, salt, pepper, garlic, lemon juice and zest together.

Rub chicken with the mayo mixture all over the outside and inside the cavity as well. Making sure to cover the entire bird.

Stuff bird with the left over lemon and quarter your onion and stuff that in the cavity as well.

Roast for  about 1 1/2 hours. Or until the juices run clear between the breast and thigh.

Cover chicken with foil and allow to rest for 20-30 minutes before roasting.

  9. I am planning to make this tonight. I am wondering: in the last line of the instructions do you mean "wrap in foil & allow chicken to rest AFTER roasting"? or do you really mean as you stats ".....before roasting"?
    I am thinking afterward would help to finish the cooking. before, the mayo would just get all over the foil.

    1. Hi! I'm from NH too! ;) Sorry for the confusion that was a typo. You cover the pan/chicken with foil after roasting while you allow it to rest. Just to keep it warm!

  10. I have made this a few times now, and even my pickiest eaters LOVE it. I mix the mayo with tenerizer and poultry herbs and slather on, then roast on top of carrots and potatoes in a cast iron skillet. It's GORGEOUS, easy, and delicious.

  11. Chicken fixed any way has been my all time favorite meat since almost all of my 69 1/2 years. I enjoy cooking every day for my husband and myself and especially delighted when family members are home to cook for. This recipe sounds delicious. I'm adding the recipe to my massive collection and hope to try it sometime.

  14. Made this for dinner last night and it turned out delicious! I had a smaller chicken so I had quite a bit of the mayo mixture left over. I am looking forward to using this recipe for our Thanksgiving bird this year. Thanks for sharing!

  15. I'm trying it tonight with minced garlic, thyme, basil, rosemary, lemon pepper, celery salt and smoked paprika. It smells wonderful!

    1. No, leave it as is. Basting will just wash all of the mayo off.

  18. Will this mayonnaise mixture work on skinless chicken tenders? I'm looking for a way to make a low carb crispy coating on them. I've got a recipe that calls for coating in butter then rolling in parmesan and spices. But I'm thinking that mayonnaise with parmesan and and spices might be better. Any thoughts?
