Bacon Ranch Avocado Egg Salad Sandwich (My new favorite!)

I have loved egg salad since  I was a little girl. My mom and I are the only members of my family that will eat anything mayo based. Egg salad was something we only made once in awhile since no one ate it besides us! We would dice up the boiled eggs add in some mayo, little salt, little pepper. Pile it high on some white bread.

Simple and easy.

As I've gotten older I try to watch my mayo intake. As much as I love salads filled with a nice creamy  mayo dressing. It just is not healthy to eat it on a regular bases.

So what you can you sub your mayo for? Avocado.

Mash an avocado up and use it is a spread! I love it on my sandwiches and burgers.. though my husband thinks I am out of my mind... he doesn't know what he is missing! I will trade my mayo slathered burger for one covered in creamy green goodness any day!

Even though I have "healthified" my egg salad I kinda go backwards from there by adding a couple slices of bacon on top.

I just can't help it!

Bacon + Ranch = Awesome.

Bacon Ranch Avocado Egg Salad Sandwich
Recipe yields 2 sandwiches 


4 hard boiled eggs
1 avocado mashed
2 tbs light sour cream
1 tsp white vinegar
1/2 tsp dill weed
1/2 tsp chives
1/2 tsp parsley
1/2 tsp minced garlic
1/4 tsp salt
pinch of black pepper

2 slices of cooked bacon
4 slices of your favorite bread (I use my husbands honey oat bread)
bean spouts (optional)
tomato slices or diced cherry tomatoes (optional)


In your food processor add your avocado, sour cream, vinegar,  herbs, garlic, salt and pepper. Pulse until combined.

Chop your boiled eggs coarsely. Mix together with your avocado dressing. When everything comes together. Spread on your favorite bread then top with  bacon, sprouts and tomato.

    1. I know, I've a kick with avocados. This tastes a lot like the deviled eggs I made for the BBQ.

  10. Absolutely delicious! I will never use mayo in my egg salad again.

    I mashed the avocado in the bowl, added the remaining dressing ingredients. Added the eggs, and using my pastry blender chopped the eggs. One bowl mixing - I like! If the avocado didn't mash completely, it would have the consistency of an egg white so you wouldn't even know that it wasn't pureed.
