Raspberries and Cream Cupcakes For Avery

My friend Samantha from a Salty Sweet Life asked if I and some other bloggers would like to bake a cake in the honor of Avery Canahauti. Avery was a 5 month old baby who died last month. She was suffereing from SMA.

Allot of you may of heard about Avery... Avery's story went viral last month thanks to the blog her parents created called Avery's Bucket List, and her passing made national headlines. Avery would have been 6 months old today.

As a mom of 3, my youngest being only 2 months older than Avery... I can't imagine the pain her parents feel right now. When I first heard of Avery's Bucket List.... I checked it out followed along a bit and cried every single time I read an entry her father wrote.

My heart goes out the the Canahauti family, I and many others will keep them in our prayers.

Raspberries and Cream Cupcakes for Avery


2 1/2 cups flour
2 cups sugar
1tsp baking powder
1/2 tsp baking soda
1 1/3 cups buttermilk
1/2 cup butter (1stick)
1 tsp raspberry extract
The zest of one large lemon
4 egg whites


 Add all dry ingredients lemon zest, extract, and butter into the bowl of your electric mixer. Mix for 30 seconds on low.

Add in buttermilk, beat on high for 2 minutes.

Add in egg whites beat for additional 2 minutes.

Fill 24 cupcake liners about 1/3 of the way. Drop 3 Raspberries in the center of each and top off with a bit more cake batter.

Bake for 20 minutes at 350 or until a tooth pick is incerted and comes out clean.

For the frosting:

2 packages of room temperature cream cheese
1/4 a cup of seedless raspberry jelly
4-5 cups of powdered sugar
1/2 tbs of vanilla extrat
pinch of salt

In the bowl of your elextric mixer cream the cheese and jelly together. Add in vanilla and salt.

Beat in your powdered sugar until your desired consistency. Pipe on to cooled cupcakes.

  6. So far I haven't been able to find Raspberry Extract here in Alaska. Is there any substitution god it?

    1. That was supposed to say "is there a substitution FOR it".

    2. You can use vanilla extract or even lemon extract. The raspberries and the jelly will give it allot of that fruity flavor all in it's own.
