Skinny Grilled Chicken and Potato Salad

I'm watching the news right now as I type this blog post (yes I'm a major blog slacker!) I should have done this days ago... or even last night. But yeah. I didn't.

I'm at the point where I don't know WHY I watch the news. What's going on in the world gives me a minor anxiety attack.

As a parent you worry about your kids and their safety 24/7. Your worst nightmare is something terrible happening to them. Though just as a warning to any possible creeps in the world. You ever hurt my kids... and I'll go after you like a mother bear!

I think all of us mothers have a Mama Bear in us.

After THIS news story that happened right here in quiet little New Hampshire 2 years ago. I've been scared. THAT could happen to me. I actually asked my husband last night if it were possible we get a home alarm system. I used to feel safe that my dog Ollie would scare any intruders away. But that's not enough anymore. I truly worry.

I don't want to sound like a basket case or something that wants to stay tucked away in the safety of her home... But the thoughts are always in the back of my head.

So this morning as I was packing Hubs's lunch while we were watching the story that is all over the news about the little boy in NYC who went missing over 30 yrs ago and they have now just had a break in the case. I for the millionth time tell my husband how scary it is today... "What has our world come too" type rant.

He stops me and says "You know crime today is at the lowest it has been in decades right?"

I argued that, that's not true.  He says it is just so over publicized.

He googles it in total Hubs fashion. Because that's what he does. Anytime we disagree he pulls out the ipad. "I'm gonna Google it!" So he does and he pulls up an article for me to read.

Ya know what he was right. It has decreased, it is half as bad as it was in the 70's-80's.

Needless to say that makes me feel slightly better!

Lets get back to the salad ok? ... enough ramblings about whats going on inside my head!

The great thing about this Chicken Potato Salad is that it's all cooked on the grill. So on those 90 degree summer days you don't need to turn the stove on!

You can also use leftovers....

I'm always a fan or recipes using leftovers!

I've cut the carbs by decreasing the potatoes to half and adding some protein in by using skinless chicken breasts. Also cutting the calories by using light mayo and Greek yogurt. Pump up the vitamin by using a variety of veggies.

This is a potato salad that you can eat as a meal!

Skinny Grilled Chicken Potato Salad


4 medium grilled or baked potatoes and cubed
1lbs of grilled chicken breasts
1 bell pepper diced
1/4 cup diced red onion
1/2 cup of diced cucumber
1/2 cup of light mayonnaise
3/4 a cup of plain Greek yogurt
The juice of half a lemon
1 tbs of red pepper flakes
1 tbs of dill weed
1 tbs of minced garlic
1/2 tsp salt (more if wanted)
Pepper to taste (optional)
Sliced Scallions to garnish (optional)


To grill your baked potatoes, wrap scrubbed potatoes with a tbs of olive oil in foil, place on top rack of you hot grill and and leave for about an hour or until they are fork soft.

In a small bowl whisk your mayo, yogurt, lemon, red pepper flakes, dill, garlic and salt together.

In a large bowl add all other ingredients together and lightly toss with your dressing.

Refrigerate for at least 2 hours or until cold.

I prefer mine the next day... so much more flavor!

  1. i agree with you about the world being so scary, but we can not be prisoners in our home. i don't worry for myself, its for my future grandchildren. for me, baking is my peace, so i just go into my basement in my little corner where i have my "bakery" and bake my worries away, i am using your loft house cookie recipe and making the puzzle piece cookie, selling them at the local farmers market and donating the money to autism.   7. I made this yesterday and it came out great I did not have red onions or dill so I added red bell peppers, celery and roasted the potatoes. Thanks for a lighter option!
