Caramelized Onion, Spinach, Tomato, Feta Galette with a Cauliflower Crust

Well folks I've been a wee bit behind on the blog the past couple of days. I've been super busy.

I made this the other  night for our "Meatless Monday" dinner. I was kind of going out on a limb when I decided I wanted to use some mash cauliflower in my pastry crust.

But it worked!! It was easy to roll, stayed together ok while baking and it even tasted a bit like roasted cauliflower.

Caramelized Onion Spinach, Tomato, Feta Galette w/ a Cauliflower Crust


1 cup of mashed cauliflower
1 1/4-2 cups c all-purpose flour
1/4 t salt
1 stick of cold butter
1/4 c ice water
1 bunch of baby spinach
1 Roma tomato thinly sliced
1 cup of caramelized onions
1/4 cup feta cheese crumbles


With a pastry blender blend 1 1/4 cups flour, salt and cold butter together until you have pea sized bits. Mix in cauliflower mash. Slowly add in water until dough comes together. If it is still very sticky slowly add in more flour until you get a manageable dough.

Refrigerate for 1 hour.

Roll out into a 12 inch circle on a piece of parchment paper.  

Spread onions out on crust leaving an 1 1/2 inch  edge.

Top onions with spinach.

Place tomatoes in consecutive circles around the tart. 

Sprinkle with feta.

Fold edges over veggies. Bake at 375 for about 30 minutes.

Or until crust has browned and is crisp to the touch.

    1. Yes cooked cauliflower. I will have to add that into the instructions. Thanks for catching it!
