Whole Wheat, Oat, Maple, and Apple Scones

Yes yes yes... I am  baking with whole wheat. It is not something you see me do very often. I tend to eat healthy through the days and then a big splurge in the baked goods department.

BUT it has been 5 weeks since I had Madelyn and I have 10lbs I'd like to loose before the holidays. So you'll see me cleaning up my act a bit.

Or at least I'm saying that now.

But after yesterday's brownies stuffed with Oreos, Kit Kats and Caramellos....

And tomorrow's post for a Macaroni and Cheese Pie w/ Bacon Lattice.

Probably not BUT I swear I am going to do it!

Whole Wheat Oat Maple and Apple Scones

1 cup rolled oats
1 cup whole wheat flour
1 1/2 tsp baking powder
1 tsp cinnamon
1/4 a cup pure maple syrup
1 cup chopped apples (about one apple)
1 egg
1/4 cup milk ( I used 1%)
1/3 cup butter ( you can also substitute unsweetened applesauce)
1 tbs milk for brushing
1 tbs turbinado sugar (raw sugar) for dusting


Preheat oven to 400.
In a medium mixing bowl blend flour and butter together with a pastry blender or fork until the butter is in pea sized pieces. Add in oats, cinnamon, egg, milk, and maple syrup. Mix until it is just incorporated. Fold in apple pieces.

Pat into a disk and cut out into circles using a biscuit cutter or cup.

Brush with milk and top with turbinado sugar.

Bake for 10-12 minutes.

  3. My little guy turned 7 months just the other day, and I've finally reached my pre-pregnancy weight. I should have switched to whole wheat a long time ago!! These do look so delicious, though. I'd feel good eating these for breakfast!

  4. Good for you! With my first 2 kids it took me a year to get back down to my pre baby weight. I'm determined to loose this 10lbs by Christmas... lets see how I do! Though I'm not sure just switching to whole wheat will do... It's the chocolate and butter I need to cut and start running again!

  5. These just came out of the oven (I LOVE your blog, great recipes!) Anyway, a couple of questions - how many does your recipe make? Mine came out with 12 average sized scones (not Panera size as big as my head but decent size). What are your thoughts on calorie count? Guesses? I was thinking probably 200 cals? So, so good!

  6. Mine were jumbo... I made 6 but I used a big cup to cut mine rather than a biscuit cutter. These are things I need to remember to post! So thanks for asking because now hopefully I'll remember! As for the calories. My guess an average sized one would be about 200-250 calories.... mine were probably closer to 250-300. As I become more organized I'd like to start posting calorie counts for each recipe as well as fat and sugar content.

  9. I was just revisiting this recipe, and writing it down. It occurred to me that maybe you could substitute the butter with pureed pumpkin as well. What do you think?
