Roasted Garlic French Onion Dip

Here is another game day recipe.

This is possibly my favorite new recipe of all time.

For those of you who know me well know that I am a reformed chipaholic.... and my addiction was BAD. For years I would pound chips and onion dip. Fritos... Lay's potato chips... my biggest problems.

About one and half years ago my husband decided to book a vacation, I knew I wanted to tone up and loose about 5-10lbs before I spent a week in my 2 piece.  So first things first.... chips and dip had to go!

I have not eaten chips and dip for quite some time now...

Then I made this.........

Roasted Garlic French Onion Dip

2 diced yellow onions
2 tbs olive oil
1 bulb roasted garlic
1 16 oz container light sour cream
1 tsp onion powder
1/4 tsp salt

In a large fry pan saute your onion until they are caramelized. About 20 minutes on med/low heat.

When they are nice and golden set aside to cool.

Take one bulb of roasted garlic and mash.

Mix garlic, onions, sour cream, onion powder, and salt together.

Refrigerate for one hour.

And enjoy with your favorite chip!

I attempted to make a healthier baked potato chip.... BUT

I burnt them.

Yes even I burn things from time to time!

So instead I pounded this dip with my favorite chip of all time.

Cape Cod Sea Salt and Pepper kettle cooked chips.

I had this for dinner.

  1. I think I suffer from the same chip addiction as you. In fact it's a potato addiction. Baked, fried, roasted, mashed... this sounds yummy! And, erm..ahem..low fat?! ;-)

  2. Chips and dip are my weakness as well, but indulging in them once in a while keeps the monster at bay. This looks like a delicious dip to try. I love those Cape Cod chips too! :)

  3. Oh my goodness - this looks good! I will have to try this next time I have to bring a dish somewhere.

  4. Thanks for sharing this. I am always looking for good dips to make.

  5. I'm ashamed to admit that I usually buy the cruddy store version of this - but now that I see I can make it on my own, yay!

  6. Courtney I too am guilty of buying it! I don't think I will ever agein after making this though.

  7. found on pinterest and have made three times now! never going back to store bought again!
