Baked Chickpeas... The Best Healthy Snack Yet!

Today I was suposed to publish my post on Macaroni Pie with a bacon lattice top. But I was not thrilled with the pictures. And I put some more thought into it and there is something I wanted to tweak the recipe so stay tuned I WILL be making it again and posting the results.

But on a lighter note.... Baked Chickpeas. The best healthy snack I think I've ever had!

It is the perfect beer snack... bars need to nix the peanuts, pretzels or popcorn... these chick peas made me so thirsty! They get so crunchy just like a corn nut. And because the chickpea flavor is so mild you can season them so many different ways.

I have seen a few posts for them over the past  month or so... and they have been floating around Pinterest as well. But the first post I saw that caught my eye was Fat Girl Trapped in a Skinny Body's version that she did for the Secret Recipe Club. Though I did a different spice mix I still followed her directions closely. Check out her blog its one of my favorites I think I bookmark almost every recipe post to make asap!

I only did one batch this time around my oldest son loved them between him, my husband and I... we polished them off last night after dinner.

2 cans of chickpeas
1.5 tbs olive oil

Spice Mix

1/2 tsp cumin
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp paprica
1/2 tsp white sugar
1/4 tsp salt

Strain and rinse chickpeas. Lay them on a double layer of paper towels to dry. Rub the tops gently with another paper towel to help soak up any moisture.

While they are air drying pre heat your oven to 425 and mix up your spice mix.

Toss your chickpeas in a bowl with olive oil evenly coating. Then coat with your spice mix.

Spread in an even layer on a lined baking sheet.

Bake for 45-60 minutes.

I tossed them ever 15 minutes to ensure they evenly cooked.

Let them cool then start snacking!

  6. These look great. I've had a note on my recipe file to try roasting chickpeas for a while now. Not one person in my house enjoys chickpeas normally, but I've been told this is completely different. Do you agree?

  9. Sherilyn, I love roasted nuts like this too! I do pecans, I should do almonds soon! But my kiddos won't eat them.... yet they eat chickpeas?

  13. Never had chick peas. Which is better for this recipe, the canned in a liquid or dry bagged variety?

    1. Canned chickpeas is what you want to use for this recipe.

  14. If you make a large batch, how long do they last? Do they need to be stored in the fridge? Is a mason jar an okay way to store them? Do they taste just as good over time?

    Sorry for all of the questions. I've been trying to find healthy snacks that I can make but that can also last over time. For instance, I love to make Kale Chips, but I have found that when I make them, I have to eat them pretty immediately...the texture and taste are just not the same later on...unless I'm missing something with Kale Chips too! So I'm hoping these chickpeas could be a long-lasting snack that I could make in large batches!

  15. Awesome. I have been known to open and drain a can of chickpeas, toss a few tablespoons of olive oil and 5 spice into the bowl with the chickpeas and grab a spoon. Love this as an alternative to crackers or nuts when I am in the mood to snack.
    I couldn't help but chuckle when you said you bookmark almost all the recipes from "Fat Girl in a Skinny Body" cause I do the same for your's. Keep 'em coming.

  16. did you remove the skins of the chickpeas, i used a similar recipe but it called for removing the skins and by the time i got all the skins off i was frustrated with the recipe for being so time consuming i never tried them again.
