Veggie Flat Bread

I never plan it this way but almost every Monday is meatless... So I guess we can call it Meatless Monday...

This was a last minute scrounge through he fridge meal... and surprisingly it was scrumptious!

Though my husband wasn't jumping up and down over it... he's not a fan of hummus. I however AM!

Vegetable Flat bread

Your favorite pizza  dough (we use Portland Pie Co. Shipyard Beer Dough.... it's the best!)
1 container hummus (we used a tomato basil flavored one)
3 cloves minced garlic
1 cup cauliflower florets
1 cup broccoli florets
1/2 a bell pepper chopped
1/2 a red onion diced
1/8 a cup fresh Parmesan cheese

Preheat oven to 400

Roll dough out, bake for 10 minutes.

Remove from oven and spread hummus over crust.

Then sprinkle your garlic, and veggies over the hummus.

Top it with your grated parm.

Bake for another 15-20 minutes. When dough is golden brown it is done!
