Maple Scallion Corn Bread

There is nothing that screams comfort fall food more than cornbread served on the side of a hot soup or chili.

Now I will admit this was the very first time I've ever made cornbread... as much as I love it. I buy mixes...... yes I know.... I'm lazy.

I discovered it's quite easy to make!

Maple Scallion Corn Bread

1 1/4 cups flour
3/4 cup cornmeal
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
3/4 cup half and half
1/4 cup maple syrup
1/4 cup melted butter
1 beaten egg
1/4 cup sliced scallions


Preheat oven to 400.

In a medium with a fork mix flour, cornmeal, sugar, baking powder, scallions and salt together. In a separate bowl whisk half and half, syrup, butter, and egg together.

Fold into dry ingredients.

Spread batter into a 8x8 greased pan.

Bake for 25 minutes.
