Yummy Brown Sugar Meringue Cookies

Yep this is by far the easiest tastiest healthiest cookie around.... Please take my word for it and whip them up. Literally that's all you do whip those egg whites with sugar and bake. Easy easy easy!

Also know what I love almost as much as this cookie? Spelling the word Meringue (MER ING GUE) I say it just like that every time I type it... Yes I know random and I'm strange.

Brown Sugar Meringue Cookies

3 egg whites
1/2 cup brown sugar
1/2 tsp vanilla extract
pinch of salt


Preheat oven to 225.

In your mixer beat eggs and salt on high till soft peaks form. Slowly add in brown sugar continue to beat on high till stiff peaks form and its glossy looking. Beat in vanilla.

Pipe into kiss shaped cookies on a lined cookie sheet. I did mine in about 1 1/2 inch kisses.

Bake 1 hour

Turn your oven off and crack the door and let cool.

Then enjoy....

I ate about 10

And my kids at twice as many....

In fact they were stealing them as I was trying to take pictures. Those chubby blurry fingers would be Chase's sneaking in!

  4. They were great so glad you posted the recipe! I'm actually kinda meringue obsessed now... making more but all kinds of flavors. I have someone comeing over tomorrow who really watches they eat. It will be nice to share a treat she can enjoy without feeling too bad about!

  7. I found your recipe via google and boy am I glad I did! They are SOOOOOO good! I added about a teaspoon of pumpkin pie spice and the only problem was I couldn't stop eating them. I will be making these again soon.

  8. Tasted wonderful! However, mine stuck and what I got off had a taffy like consistency when eaten. What did I do wrong? First time making meringue cookies. Excited to try again.

    1. Did you line your baking sheet with parchment paper or a silpat? If they were still chewy most likely they needed to bake longer. They did not "dry" out enough.

  9. Nice, simple receipe. Do your cookies weep though? Just made my first batch, and the cookies were weeping like crazy.
