Maple Oat Scones w/ Whipped Maple Butter

I was browsing recipes and food blogs this morning, and I came across this great blog Its great! I found a recipe for these scones and figured I still needed to make the family breakfast so lets whip them up!.

This recipe is so quick and easy anyone can make them... and oh so yummy! I set out to work at 8 am... I was finished preparing, taking pics, and baking by 8:45am. That's the way Sunday breakfast should be!

So it's Sunday so as always my lovely husband (he really is!) is sleeping in. I try to give him to at least 9am.... the kids and I are usually always up by 6.... 7 on a good day. I woke him up at 9 with a hot cup of coffee in his STEVE mug (that's his name if you haven't guessed.) And a fresh from the oven scone with whipped maple butter.... Does he know how lucky he is???? I'd kill for 9 am wake up time... let alone someone  bringing me hot coffee with scones!

Maple Oat Scones w/ Whipped Maple Butter

  • 2 cups flour
  • 1 1/2cups rolled oats
  • 1 egg
  • 1/2 cup cold butter
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1/4 cup maple syrup
  • 1/2 tsp cinnamon
  • 1tbs sugar

Preheat oven to 425.
Combine your flour, oats, sugar, baking powder, and cinnamon give it a quick toss with a fork.

Don't mind the matchbox cars in the back ground... the boys were playing cars in the kitchen while I was baking.

Cube your cold butter and blend with dry ingredients with a pastry blender till its course crumbles.

Add in milk, syrup, and egg mix till it comes together in a ball.

On a lightly flowered surface roll your dough out into a rectangle about a 1/2 inch thick. Cut into 12 rectangles and bake for 12-15 minutes on a parchment paper lined cookie sheet.

Directions for whipped maple butter:
Take half a stick of room temp butter beat with electric mixer for 30 seconds, add in 1tbs of maple syrup beat for another 15 seconds. With a rubber spatula smooth and mix it into a ball. Pop it in the freezer for about 5-10 minutes.  And its done!
